Lazy Lasagna image

I had some ricotta needing used up, some Italian hot sausage, and pepperoni..a box of lasagna noodles..so threw together some roll up lasagna. Must have been good, everyone asked for seconds.. Enjoy!

8 lasagna noodes, cooked according to directions on the box, rinsed and drained well.
1 - 1 1/2 c shredded, mozarella cheese, divided
1 c grated, parmesan cheese, divided
1/2 tsp garlic powder
1/2 lb or 2 - 3 large links italian hot sausage( without casings or bulk ) or ground beef ( totally optional )
1 medium jar spaghetti sauce
40 small slices pepperoni, cut into 1/4 pieces ( divided )
salt, pepper to taste
1 - 15 oz ricotta cheese
1 egg
1 tsp dried basil
1/2 tsp oregano
2 minced green onions
dried parsley flakes ( optional )

Steps:

  • 1. Have noodles cooked, rinsed and drained well. Preheat oven to 350 degree F. Prepare a baking dish with non stick cooking spray. ( I used a 9 x 13 baking dish ).
  • 2. In a medium skillet, season and brown the sausage or ground beef with salt,pepper and garlic powder; drain. Set aside about 1/2 cup browned sausage. Place the rest back in the skillet.
  • 3. Slice the pepperoni into 1/4 pieces. add about half to the sausage or burger. Add the sauce. Bring to a simmer, just long enough to get the flavor of the sausage and pepperoni flowing. Spread an even amount of sauce into the bottom of prepared baking dish.
  • 4. In a medium bowl, mix ricotta, oregano, basil, 1/4 cup parmesan , 1/2 cup mozarella, egg, chives, salt and pepper, to taste.
  • 5. Take a lasagna noodle, spread about 2 heaping tablespoons of ricotta mixture over each noodle to within 1/2 in. of edges. Top with a sprinkling of sausage, pepperoni. Spread about 1 tablespoon of sauce on top.
  • 6. Carefully roll the noodle and place seam side down in prepared baking dish.
  • 7. Sprinkle 1/2 cup mozzarella and 1/4 cup parmesan over the noodles. Now, spread remaining sauce evenly over the noodles, making sure the noodles are covered, so not to dry out.
  • 8. Sprinkle remaining cheeses evenly over the sauce. Sprinkle with parsley if so desire. Place in preheated oven and bake 35 - 40 minutes or until bubbly and cheese is browning. I leave mine stand 5 minutes before serving.
  • 9. Use whatever other fillings you desire. Enjoy!

Overall, I thought this recipe was pretty good. It was easy to make and it tasted good. However, I think I would have liked it better with a different sauce.
