Steps:
- In large skillet, heat oil over medium high heat. Add onion and cook until tender. Add Taco Spices & Seasonings, tomatoes and chiles; mix well. Bring to a boil; reduce heat to low and cook, uncovered, 5 minutes, stirring occasionally. Spray a 2-quart casserole dish with nonstick cooking spray; arrange 1/2 of tortilla chips, sauce and Monterey Jack cheese. Repeat layers, top with sour cream. Bake in 350 degrees F oven for 25 minutes. Sprinkle with cheddar cheese and bake 5 minutes longer. Let stand 10 minutes before serving.
