Kiwifruit Rice Salad image

Whenever I have left over ham, I'm sure to make this main dish salad. Once I start to eat it, it is so hard to stop!!!

Number Of Ingredients 16

2 ¼ cups water
1 cup brown rice
2 tablespoons butter
¼ cup chopped onion
½ cup chopped celery
½ teaspoon curry powder
1 cup plain yogurt
1 teaspoon fresh lime juice
½ teaspoon lime zest
1 teaspoon white sugar
1 kiwi, peeled and chopped
4 ounces cooked ham, julienned
2 ounces Swiss cheese, cubed
⅓ cup cashews
½ cup fresh mushrooms, coarsely chopped
2 kiwis, peeled and sliced

Steps:

  • Combine water and rice in a medium saucepan. Bring to a boil. Cover, reduce heat, and simmer for 45 to 50 minutes. Cool.
  • Heat butter in a skillet over medium heat. Cook onion and celery in butter until tender, stirring frequently. Season with curry powder, and continue cooking for one minute.
  • In a large bowl, mix together yogurt, lime juice, lime zest, and sugar. Stir in rice, onion and celery mixture, chopped kiwi, ham, cheese, nuts, and mushrooms. Arrange sliced kiwi over salad.
