KIM'S SWEET POTATO CASSEROLE image

Number Of Ingredients 13

casserole
o3 cups mashed sweet potatoes (2 large or 3 small)
o2 eggs, lightly beaten
o1/2 cup sugar
o1/2 teaspoon salt
o1/4 cup melted butter
o1/4 cup cream ( or milk)
o1 1/2 teaspoons vanilla extract
topping
o1/2 cup brown sugar
o1/3 cup flour
o1 cup chopped pecans
o3 tablespoons melted butter

Steps:

  • 1.Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash 2.Mix all of the casserole ingredients together until well blended. 3.Spread into a buttered casserole dish. 4.Mix topping ingredients (except marshmallows) together and sprinkle over the casserole 4.Bake uncovered in a 350 degrees oven for 35 minutes.
