This is popular at our table. A very tasty, light pasta dish. I serve with salad, bread sticks and a glass of wine.

Categories     Pasta

Time 40m

Number Of Ingredients 8

8 oz penne pasta
4 slice bacon, chopped*
2 Tbsp olive oil
2 c fresh baby spinach leaves
1 clove garlic, minced
1/4 c balsamic vinegar
1 c fire roasted tomatoes
1/3 c freshly grated parmesan cheese

Steps:

  • 1. Prepare pasta according to package. While pasta is cooking, saute chopped bacon in olive oil until crisp. Remove bacon from pan and set aside, leaving oil in pan. Add spinach and garlic to oil in pan, saute until spinach is wilted. Add balsamic vinegar and continue cooking 2 minutes. Add tomatoes and cook until softened and hot, about 2 to 3 minutes. Add the well drained pasta and bacon to pan and gently toss to combine. Sprinkle each serving with parmesan cheese. *chopped pancetta may be substituted for bacon.

I'm not a huge fan of bacon, but I really enjoyed this dish. The tomatoes and cheese are the perfect balance to the smokiness of the bacon.
