1 cup vegetable oil
2 cups sugar
1 (16 ounce) can pumpkin
4 large eggs
2 cups flour (perfect)
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 (8 ounce) package cream cheese
1/2 cup butter
2 -3 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Beat oil, sugar, pumpkin and eggs until blended.
  • Add remaining dry ingredients gradually.
  • Prepare 9x13 pan.
  • Spread batter in pan and bake in 350° oven for 25-30 minutes.
  • Cool.
  • For frosting, cream all ingredients together until well blended--smooth and creamy.
  • Frost bars.

These bars were a bit too dry, but I think that's because I didn't use enough pumpkin puree. I would definitely recommend using the full amount of pumpkin puree called for in the recipe.
