Kielbasa & Cabbage Stew image

My Great Aunt worked as head cook for a large nursing facility for 30+ years. She made this stew often for some of her patients and they just raved about it. I'm not sure where she got this recipe but it sure is delicious!

Number Of Ingredients 13

2 Tbsp canola oil
1 lb smoked kielbasa, sliced
1 onion, chopped
2 carrots, shredded
4 Tbsp butter
1 small head of cabbage, cut into 1 inch pieces
1 tsp salt
1 tsp black pepper
1/4 tsp garlic powder
8 c chicken broth
4-5 medium potatoes, peeled and cubed
1 10.5 oz. can of cream of celery soup
1 Tbsp fresh parsley

Steps:

  • 1. Saute kielbasa in oil in a large pot or dutch oven until browned.
  • 2. Add onion and carrots and continue cooking until onins are semi translucent.
  • 3. Add butter, cabbage, salt, pepper and garlic powder and continue cooking for about 10 minutes.
  • 4. Add chicken broth and cook until cabbage is tender. Once cabbage is cooked, add potatoes and cook another 15-20 minutes until potatoes are tender. Add cream of celery soup, cover and simmer for 25-30 minutes longer. Add parsley just before serving.

I wasn't sure about the apples in the stew, but they actually added a nice sweetness and crunch. I would definitely recommend trying this stew.

I'm not a big fan of cabbage, but I really enjoyed this stew. The cabbage was cooked perfectly and the flavor was mellowed out by the other ingredients. The kielbasa was also very good.
