Kidney Bean Burgers image

An experiment gone right! Keep them fairly thin to crisp the inside as well, or leave thicker for a smooth interior texture.

1 can(s) kidney beans - well drained
1/2 small green pepper
1/2 c bread crumbs, seasoned
1/4 c mushrooms - diced
season to taste

Steps:

  • 1. Kidney Bean Burgers 1 can well drained kidney beans - lightly mashed or pureed 1/2 cup seasoned bread crumbs mushrooms - diced 1/2 sm green pepper diced Season to taste (I used sea salt, pepper, paprika and cajun seasoning) Mix well and form in to patties. Place on a baking sheet lined with parchment paper. Bake in a pre-heated oven at 350 for 20 minutes, remove burgers and lightly fry in pan with olive oil (to give a crisp exterior) Serve with a fresh salad. (I used cherry tomatoes, green pepper and avocado drizzled in cranberry vinegrette with parmesan cheese). Enjoy! (you can garnish these just as you would a "regular" burger)
