Kentucky Derby Pie image

Each month our power company features a recipe and it comes in with the bill. This was the recipe this month and oh my goodness this is so so good and very easy. The recipe only made one pie and a deep dish at that. Well I didn't have a deep dish crust but I did have 2 regular so I made 1 1/2 of the recipe and it worked great....

Number Of Ingredients 8

1 1/2 c sugar
1 c flour ( self rising)
3 eggs ( slightly beaten)
1 1/2 stick butter ( melted, and let cool down some)
1 1/2 c chopped pecans
1 1/2 c chocolate chips
1 1/2 tsp vanilla
2 unbaked 9 inch pie crust

Steps:

  • 1. Preheat oven to 325. In a medium bowl add flour and sugar and stir to mix.
  • 2. Add in eggs, and butter and stir to mix some, then add in pecans, chocolate chips and vanilla. Mix well
  • 3. Divide between the 2 pie shells and bake 45 minutes. Let cool before serving

I've made this pie several times now, and it's always a crowd-pleaser. The only thing I do differently is add a little bit of bourbon to the filling. It gives it a nice extra kick.
