KENTUCKY DERBY BURGOO image

Number Of Ingredients 14

5 ounces vegetable oil
1 large carrot, diced
1 large onion, diced
1/2 bunch large celery, diced
1 pound pulled smoked chicken
1 pound diced stew meat
1/2 pound chunks of ham
2 small cans tomato paste
24 ounces V8 juice
32 ounces beef stock
32 ounces chicken stock
24 ounces blended frozen mixed vegetables
16 ounces frozen okra
4 ounces Worcestershire sauce 3 ounces hot sauce

Steps:

  • 1. In a large 14-quart stock pot, heat vegetable oil on medium to high heat. 2. Add celery, onions and carrots. Cook till onions become translucent. 3. Add smoked chicken, stew meat, and chunks of ham to vegetables and sauté for 5-6 minutes. 4. Add the rest of the ingredients and cook on low for about 2 hours.
