JOE'S CHILI image

Yield 10 bowls

Number Of Ingredients 30

1 4 tablespoons unsalted butter (quarter stick of butter)
2 2 yellow onions, diced
3 1 head garlic, minced
4 2 packages of ground turkey (about 2 1/2 lbs)
5 1 package of Italian mild or sweet sausage links (you will slice the casing to remove the meat)
6 3 tablespoons chili powder
7 2 teaspoons kosher salt
8 2 teaspoons freshly ground black pepper
9 2 teaspoons ground cumin
10 2 teaspoons granulated garlic
11 2 teaspoons granulated onion
12 1-2 teaspoons cayenne pepper (depending on hot you like it)
13 2 teaspoons cinnamon
14 1-2 tablespoons brown sugar
15 1 small can of tomato paste
16 1 bottle your choice of dark beer
17 2 cans chili beans, with juice
18 1 can pinto beans, with juice
19 1 can white beans, with juice
20 2 large cans (28 ounce cans) diced tomatos (san marzano)
21 cilantro stems, using the bunch bought for garnish- finely chop about 2 inches of stems
22 1/4 cup of cream (can use whatever you have half/half works)
23 4 ears of corn, you usually can buy a a pre-schucked package (to be oven roasted in the oven and cut from the cob) - for each corn, salt, pepper, and olive oil the corn in wrapped in aluminum - cook in oven for about 30 min at 400.
24 corn starch
toppings/garnish:
1 cilantro - chopped
2 green onion - chopped
3 sour cream
4 shredded cheese
5 jalepenos - thinly sliced

Steps:

  • 1 Add butter and onions to a large stock pot over med high heat, until caramelized (about 10-15 min). 2 Add the garlic and saute 1 minute longer. 3 Add the turkey, sausage. Cook until the meat is nicely browned and cooked through. I use the spatula/cooking spoon to break up meat. Add the spices, sugar and tomato paste half way through (except for the cayenne, wait until you add the tomatos and beans) 4 Add and stir beer, tomatos, beans, and cilantro stems 5 Once the corn is done roasted in the oven, and cut from the cob, add to pot. 6 Add cream about 1/2 hr into cooking. 7 lower heat, cook about 2-3 hours. 9 about hour / 1.5 hrs into add the corn starch paste to thicken chili. To make the paste, in a small bowl, add a couple spoons of corn starch, and then ladle some of the chili liquid in to make a paste until looks like runny oatmeal consistency. 10 Bring to simmer once consistency looks right (should be thick). the longer you slow cook it the thicker it gets.
