Jodie's Bacon Carrot Potato Soup image

This is an awesome dish for a rainy day, or even on a chilly day.. Enjoy!

Number Of Ingredients 13

6 medium potatoes, diced
1/2 lb bacon (cut up)
1 small onion, chopped
4 Tbsp butter
1 can(s) carrot, cubed
2 can(s) evaporated milk
salt and freshly ground pepper to taste
1 clove garlic minced
1/2 tsp rosemary, dried
1/2 tsp thyme, dried
1/2 c heavy cream
8 c water
ADD MORE WATER IF NEEDED

Steps:

  • 1. In dutch oven, combine all ingredients except milk and cream.
  • 2. Cook potatoes and vegetables, bacon, and spices in water...30 minutes After potatoes are done, do not drain water and turn down to medium heat and add butter just mash 3 to 4 times...
  • 3. Pour in milk and cream, salt and pepper to taste...stir and simmer at medium low heat for 20 minutes...serve hot....Enjoy
