Overall, I thought this salad was good, but not great. I would probably make it again, but I would make some changes to the recipe.

I would have liked the salad more if the Jerusalem artichokes were roasted instead of boiled. I think roasting would have brought out their flavor more.

This salad is a great way to get your daily dose of vegetables. The Jerusalem artichokes are packed with nutrients and the arugula is a good source of vitamins and minerals.

I wasn't sure what to expect from this salad, but I was pleasantly surprised. The Jerusalem artichokes were surprisingly tasty and the arugula added a nice peppery flavor.

This salad is a bit time-consuming to make, but it's worth the effort. The Jerusalem artichokes take a while to cook, but they're so delicious.

I thought the dressing was a bit too oily for my taste. I would recommend using less olive oil or adding some lemon juice to brighten it up.

This salad is a great way to use up leftover Jerusalem artichokes. I had some leftover from a previous recipe and this was the perfect way to use them up.

I'm not a huge fan of arugula, but I thought it worked really well in this salad. The bitterness of the arugula balanced out the sweetness of the Jerusalem artichokes.

Easy to make and very tasty! I used a mandoline to slice the Jerusalem artichokes and they turned out perfectly crispy.

This salad was a delightful surprise! The Jerusalem artichokes and arugula paired perfectly, and the Parmesan cheese added a nice touch of richness. I will definitely be making this again.
