I learned to make this in a middle school home-ec class. The teacher called them "Captain Crunch Cookies" because when strawberry Jello is used they taste somewhat similar to Crunch Berries. These cookies taste better if you let them cool completely!

Number Of Ingredients 8

3/4 c shortening
3/4 c sugar
1 tsp vanilla extract
3 large eggs
3/4 tsp salt
1 pkg (3 oz) fruit flavored jello
1 tsp baking powder
2 3/4 c all purpose flour

Steps:

  • 1. Cream together the shortening, sugar and vanilla. Add eggs, salt, jello, baking powder and flour. Mix well until a soft dough forms. Roll into balls and place on a hot, greased, waffle iron. Close lid and bake for approximately 2 minutes. Times will vary with waffle makers. These cook faster than normal breakfast waffles.

These cookies are a little too sweet for my taste, but I think I'll try them again with less sugar next time.
