Jean Dobrea's Ricotta Cookies image

Number Of Ingredients 11

1 pound Butter, softened
2 cups Sugar
3 Eggs
1 pound Ricotta cheese, drained
2 teaspoons Vanilla
4 cups CAKE flour
1 teaspoon Baking soda
1 teaspoon Salt
4 tablespoons FROSTING -- Butter
4 cups FROSTING -- Sifted Sugar
4 tablespoons FROSTING

Steps:

  • Preheat oven to 350
  • With electric mixer, cream together butter and sugar until fluffy. Beat in eggs, blend in ricotta cheese and vanilla
  • In another bowl, stir together flour, baking soda and salt. Add to creamed mixture a little at a time, beating well.
  • Line cookie sheets with parchment paper. Drop batter by tablespoon on paper (well spaced). Bake 12 minutes, do not allow cookies to brown. Cool on trays, then ice.
  • Mix together last three ingredients for FROSTING
