Jambalaya image

My girlfriend gave me this recipe. It's a keeper! My photos

Number Of Ingredients 12

1/2 c olive oil
3 c chopped onions
2 Tbsp minced shallots
1 Tbsp minced garlic
1 c chopped green bell pepper
3 tsp salt, in all
1 lb adouille sausage, cut in 1/4 inch slices
1 1/2 lb white and dark chicken meat, cut into 1" cubes
1 1/4 tsp cayenne pepper
3 c long grain rice
6 c water, or chicken broth (i use broth)
3 bay leaves

Steps:

  • 1. Heat oil in large heavy pot. Add onions, shallots, garlic, bell pepper, 2 teaspoons salt and 1 teaspoon cayenne pepper. Stir and brown vegetables for 20 minutes.
  • 2. Add the sausage and continue browning, cooking about 15 minutes.
  • 3. Season chicken with remaing salt and cayenne pepper. Add to the pot with the bay leaves. Add rice and stir for 2-3 minutes.
  • 4. Add the water/broth, stir, and cover pot. Cook for 35 minutes (until rice is tender, and all the liquid is absorbed. Remove from heat and let stand 2-3 minutes before serving. Enjoy!
