Jalapeño, Cilantro Chicken & Rice Recipe - (4.4/5) image

Number Of Ingredients 10

2 cups cooked rice
2 cups (8 ounces) Monterey Jack cheese, shredded
1 1/2 cups cooked, chopped chicken breast meat
1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk
1/2 cup red onion, finely chopped
2 large eggs, lightly beaten
1/4 cup cilantro, finely chopped
2 tablespoons butter or margarine, melted
1 tablespoon jalapeños, diced
Salt

Steps:

  • Preheat oven to 350 degrees fahrenheit. Combine all of the ingredients in a casserole dish. Bake for 45-60 minutes.
