Jalapeno Cornbread image

Number Of Ingredients 12

1/4 c vegetable oil
1 c yellow cornmeal
1/2 tsp baking soda
2-3 Tbsp jalapeno peppers-chopped
1/2 c onions-chopped
1/2 c green onions-chopped
1 can(s) cream style corn
1 c milk
1 tsp salt
2 large eggs-beaten
1 c cheddar cheese-shredded
extra cheese for top

Steps:

  • 1. Preheat oven to 350'. Put oil in cast iron skillet (or oven proof skillet) to heat as oven heats.
  • 2. Mix all ingredients together in a large bowl.
  • 3. Once oil is heated (I usually let heat until oven is done preheating) add oil to bowl. Stirring well.
  • 4. Pour mixture into hot skillet. Sprinkle cheese over the top.
  • 5. Bake for 50-60 minutes.
