4 ounces green beans, cut into 2-inch pieces (2 cups)
1 tablespoon olive or vegetable oil
6 ounces whole mushrooms, cut into fourths (2 cups)
1 medium zucchini, cut lengthwise into eighths, then into 1-inch pieces
1 medium yellow onion, cut into 1/4-inch wedges
2 cloves garlic, finely chopped
2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves

I love the combination of flavors in this dish. The roasted vegetables are sweet and savory, and the Asiago cheese is nutty and salty.

This is a great recipe for a quick and easy weeknight meal. The vegetables are roasted in the oven, which frees up time to cook the pasta.

I'm not a big fan of vegetables, but this dish was actually really good. The Asiago cheese helped to balance out the flavors.
