1 lb Italian sausage
1 onion (chooped)
2 garlic cloves (chopped)
1 jalapeno pepper (chopped)
2 cups Ragú® Pasta Sauce
2 tablespoons canola oil
4 eggs
2 cups refried beans (black, pinto or your preference)
3 tablespoons fresh cilantro
1/2 cup feta cheese
1 teaspoon salt and pepper
4 corn tortillas

Steps:

  • Heat a cast iron skillet on medium high, add sausage in chunks and cook for 3 minutes.
  • Add onion, garlic, jalapeño, salt and pepper. Cook for 3 minutes.
  • Add Italian ragu pasta sauce, cook for 10 minutes and set aside.
  • 4 Heat a non stick pan, add oil and cook for over easy egg. Add salt and pepper.
  • Serve eggs with sausage sauce, refried beans,sprinkle feta cheese and cilantro. Warm corn tortillas and enjoy!
