Steps:
- Hammer chicken lightly until 1/3-inch thick. Mix egg, pepper and salt. After you dipped the chicken breast in egg mixture you then roll it in bread crumbs. Heat oil in a skillet until it is hot. Brown chicken (both sides). Place chicken into a shallow baking dish. Pour away remaining oil from skillet. Mix tomato sauce, garlic and basil in a frying pan. Bring to a boil and let it simmer for 10 minutes. Stir in butter or margarine. Pour sauce over chicken. Scatter parmigiana /Parmesan cheese over sauce; cover dish and bake at 350 degrees for half an hour (30 minutes). Put mozzarella slices on chicken and bake until cheese is melted (approx. 10 minutes). If you do not have Italian flavored bread crumbs, you can use for this italian chicke recipe regular bread crumbs with 1 teaspoon Italian seasoning crumbed and mixed in.
