Italian Brunch Casserole image

My stepmother made this for a Christmas morning breakfast and it was fantastic. Enjoy~

Number Of Ingredients 10

8 oz package sweet italian sausage
8 green onions, sliced (1 cup)
1/2 tsp salt
2 zucchini diced (3 cups)
1/2 tsp pepper
7 oz jar roasted red bell pepper, drain and chop
16 oz italian bread loaf, cut into 1" cubes (8 cups)
8 oz shredded sharp cheddar (2 cups)
6 large eggs
1 1/2 c milk

Steps:

  • 1. Remove and discard casings from sausage. Cook in large skillet, stirring until sausage crumbles and is no longer pink. Drain. Add onion, zucchini, salt and pepper to skillet. Saute 4 min or until vegetables are tender, stir in peppers. Drain and cool. Spread 4 c bread crumbs in lightly greased 9x13. Top with half sausage mix and half cheese. Repeat. Whisk together eggs and milk, pour over bread. Cover and chill 8 hours. Bake, covered, at 325 degrees for 1 hour or until bubbly and hot.
