Impossible Greek Spinach Pie image

This is easy and tasty. Hope you enjoy this.

1 medium onion, diced
1 clove garlic, finely chopped
1 Tbsp butter
1 pkg forzen spinach, thawed/drained
4 oz cream cheese
1 c milk
1/2 c bisquick baking mix
3 eggs
1 tsp lemon juice
pepper to taste
1/4 c parmesan cheese, grated
1/8 tsp nutmeg
1/2 c mushrooms, sliced

Steps:

  • 1. preheat oven to 350. spray a 9 inch pie plate with cooking spray. drain spinach very well.
  • 2. cook onions, garlic and mushrooms in butter until onions are translucent. Stir in Spinach.
  • 3. cut cream cheese into small cubes. Layer spinach mixure and cream cheese into pie plate.
  • 4. beat milk, eggs, bisquick, lemon juice and pepper until smooth. Pour over spinach.
  • 5. stir in half of the parmesan cheese. Sprinkle remaining parmesan on top. Then sprinkle nutmeg on.
  • 6. Bake at 350 for 35-40 minutes or until knife inserted comes out clean.

I'm a vegetarian, so I substituted the ground beef with lentils. The spanakopita was still delicious, but I think I would have preferred it with ground beef.
