Steps:
- Saute veggies and garlic in 2 T. of olive oil for 5 minutes.
- Add remaining ingredients, and bring to a boil, then reduce heat, and simmer until potatoes are tender, 15-20 minutes.
- Season with pepper.
- Serve hot.
