Houston's Spicy Caesar Dressing image

This recipe is from a local restaurant (now closed) - not sure if this is their original recipe or a copycat. Feel free to adjust the chili paste if you wish to tone down the heat. : )

Number Of Ingredients 16

1 egg yolk (optional)
1 Tbsp garlic, minced or pressed
2 tsp dijon mustard
2 anchovy fillets, minced
1 1/2 tsp freshly ground black pepper, coarsely ground
1/4 tsp salt
1/2 tsp ground coriander
1/2 tsp ground cumin
1 tsp worcestershire sauce
2 tsp cold water
1/2 c extra-virgin olive oil
1/2 c canola oil
1 1/2 Tbsp sambal chili past (thai chili paste available in the asian section of grocery)
1/2 lemon, juiced
1/2 lime, juiced
3 Tbsp parmesan cheese, freshly grated

Steps:

  • 1. Combine the first 10 ingredients (egg yolk through water) in a food processor or blender. Process until smooth.
  • 2. With motor running, pour oils in a slow steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon and lime juice, and parmesan cheese, Process until smooth.
