Horitiki is also known as a Village Salad. It's the most famous salad in Greece. No lettuce. Ever. Some people in our family don't use the vinegar, instead mixing the olive oil with a bit of water.

Steps:
- 1. Combine the tomato, cucumber, red onion and green pepper in a bowl. Add the red wine vinegar and toss gently to combine.
- 2. Add the olive oil, salt and pepper, to taste, then toss gently until incorporated. Add the Kalamata olives. Sprinkle the salad with a little oregano.
- 3. Divide the salad between two shallow bowls. Place a piece of feta on top of each and sprinkle the feta with oregano and another drizzle of olive oil. Season to taste with salt and pepper, if needed.
- 4. Note: Most often we don't plate this individually, and everyone just uses their forks to help themselves. We also take thick crusty bread and dip it in the oil & vinegar dressing that goes to the bottom of the bowl.
