Steps:
- Whisk honey, balsamic vinegar, and vanilla extract together in a bowl until smooth. Add nectarine slices and stir to coat.
- Melt butter in a skillet over medium heat. Add nectarine slices, reserving honey mixture in the bowl. Cook nectarine slices over high heat for 5 minutes; flip and cook for an additional 5 minutes.
- Transfer nectarines and butter to the honey mixture and stir in sour cream. Serve hot or cold.
