1 green bell pepper, seeded & diced
46 ounces V8 vegetable juice, homemade (#116741)
1 large cucumber, peeled, seeded & diced
2 green chilies, seeded & diced
1/4 teaspoon red wine vinegar
1/4 teaspoon cumin, ground

Steps:

  • Stir all ingredients together. Chill.
  • Ladle into bowls & pass the toppings!
  • Here are some different ones to choose from:
  • Sliced black olives.
  • shredded sharp cheddar cheese.
