This was a recipe my Mother gave me years ago--this can be doubled and even tripled (you may need it). My mother love this cake and it's a favorite of all my family!!

Steps:
- 1. Preheat oven to 300 degrees.
- 2. In a large bowl , mix together applesauce (or Oil - IF you use oil it does make it a bit flatter and more dull taste ), sugar and eggs. Mix well--almost cream ,and set aside.
- 3. Using a food processor-- mix pitted prunes ad 1/4 cup water and puree' until smooth! NOT too much--you just want to see tiny-tiny bits of prune
- 4. In a separate bowl SIFT together ALL dry ingredients..slowly add to wet ingredients from first bowl and mix well as you go.When well mixed add..Buttermilk--(IF you do not have any-make it..add 1 tablespoon of viniger to a 1 cup measuring cup and fill to top with milk--let set 3-5 minutes) then add vanills and prunes--mix well but do not over mix o prunes will settle in he bottom while baking..
- 5. Pour into a BUTTERED (9 X 13) baking dish and bake for 35-40 minutes--it will stick to a toothpick when inserted into middle--so it will not work to check this way..just do not bke more than 45 minutes tops-ori will burn.
- 6. 5 minutes before cake is done start you icing.
- 7. combine all icing ingredients in a large cooker ( it tends to boil over) and LIGHTLY mix together. Turn on medium to medium-low heat and boil WITHOUT stirring--boil for 5 to 7 minutes.. It should have a carmel color BUT , not sticky. Remove cake frm ovenndpour icing ovr immediantly and let stand for 3 to 5 minutes befor serving..can be served warm or cold. ENJOY !!!!
