Freshly made pasta is very easy to make. A few simple ingredients and a little time are the only requirements. Once you do it, you will do it again and again.

Time 25m

Number Of Ingredients 6

2 large eggs, slightly beaten
1/8 tsp baking powder (if using all-purpose flour)
2-1/2 c flour ** if using self-rising flour, do not use baking powder
1/8 tsp salt
1/2 c milk
1 Tbsp butter

Steps:

  • 1. In a large mixing bowl, stir together the flour and salt. Add the beaten eggs, milk and butter. Knead the dough until smooth (5 to 6 minutes).
  • 2. Let dough rest in a covered bowl for 10 minutes. Sprinkle small amount of flour onto a flat surface, Roll dough out to 1/8 or 1/4 inch thickness using a floured rolling pin. Let air dry slightly. With scissors OR pizza wheel cutter, cut dough into desired lengths. Shake out strips and place on towel to finish drying, about 2 hours.
  • 3. Cook noodles in a large pot of lightly salted, boiling water for 10 to 12 minutes or until Al Dente'.
  • 4. NOTE: It may be necessary to lightly sprinkle small amount of flour directly onto dough surface while rolling out to keep it from sticking to rolling pin.

These noodles were a bit too soft for my liking. I think I'll cook them for a little less time next time.

I love these noodles! They're so versatile and can be used in so many different dishes. I've made them with chicken, beef, and vegetables, and they're always delicious.

These noodles were a little bland for my taste. I think I'll add some more salt and pepper next time.

I'm not sure what I did wrong, but my noodles turned out really gummy. I'm going to try making them again and see if I can get it right.

These egg noodles were a bit too sticky for my taste. I think I might have added too much water. Otherwise, they were still good.

I've tried many egg noodle recipes before, but this one is by far the best. The noodles were light and fluffy, and they cooked evenly. I will definitely be using this recipe again and again.
