Hold-the-Cabbage Slaw image

A colorful cabbage-free slaw made with golden beets, celery, and fennel that's dressed in a minty cider-vinaigrette. It's great to make ahead and tastes even better after one or two days in the fridge.

This slaw was a disaster! The dressing was too thick and the cabbage was tough. I ended up throwing it out.

I'm not a huge fan of cabbage slaw, but this recipe was surprisingly good. The dressing was really flavorful and the slaw was nice and crunchy.

This slaw was a bit too bland for my taste. I added some extra vinegar and salt, and it was much better.
