Heart Attack Cauliflower Grits image

We are not low carbers, but boy are these good. Recipe adapted from "500 Low-Carb Recipes". We adore these with Shrimp Jambalaya - see recipe. Unsure yield. You could add some garlic if you like.

Number Of Ingredients 8

1 large head cauliflower
1/3 cup milk
6 ounces cream cheese
1 tablespoon butter
1 cup cheddar cheese, grated
1 cup parmesan cheese
salt
1 teaspoon pepper

Steps:

  • Simmer the cauliflower in water with the milk added in (it will keep the cauliflower from turning color). When very tender, drain well.
  • With a hand masher, smash the cauliflower while mixing in the cream cheese, butter, and cheeses to the cauliflower. Salt and pepper to taste.
