Healthy Oatmeal Breakfast Cookies image

This is a recipe I created out of a need for a healthy low fat, high fiber breakfast option. This "cookie" is not very sweet. You can add more sugar if desired. Makes a great breakfast with a piece of fruit.

These cookies are a great way to use up leftover oatmeal. I always have a few containers of oatmeal in my fridge, so it's nice to have a recipe that I can use them in.

I'm not sure what I did wrong, but these cookies turned out really crumbly. I think I might have overmixed the batter.
