Steps:
- In a large bowl, cream butter, egg, and sweetener together until very smooth. Add egg and mix until well combined. Sift the baking soda, cinnamon, salt and Jay Robb Whey Protein into the almond flour. Then slowly add almond flour mixture into butter mixture. Mix until well combined. Form into a tight ball and cool in fridge until chilled.
- Preheat oven to 325 degrees F. Place dough onto non-stick surface (I used parchment paper), then top with another piece of non-stick surface (again, I used parchment paper). Roll dough out to approximately 1/4 inch thickness. Cut dough with Christmas cookie cutters, and place onto baking sheet.
- Bake for 7 minutes, or until lightly browned. Then turn off oven and leave cookies in for an additional 10 minutes. This will create a crispier cookie. Set the cookies out to cool and top with your favorite cream cheese frosting! Makes 2 dozen cutouts.
