Healthy Baked Mostaccioli image

I adapted this from the April/may 08 issue of Healthy Cooking. For a lowfat recipe, this is surprisingly satisfying.

Categories     Poultry

Time 1h

Yield 6 serving(s)

Number Of Ingredients 13

8 ounces mostaccioli pasta, uncooked
1/2 lb lean ground turkey
1 small onion, chopped
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
1/3 cup water
1 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups fat-free cottage cheese (16 oz)
1 teaspoon dried marjoram
6 ounces part-skim mozzarella cheese, shredded (about 1.5 cups)
1/4 cup parmesan cheese, shredded

Steps:

  • Cook mostaccioli according to package directions. Meanwhile, in a large saucepan, cook the turkey and onion over medium heat until the meat is no longer pink;drain if necessary.
  • Stir in the tomatoes, tomato paste, water, oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
  • In a small bowl, combine cottage cheese and marjoram; set aside.
  • Spread 1/2 cup meat sauce into an 9"x9" baking dish coated with cooking spray. Layer with half of the mostaccioli, meat sauce and mozzarella cheese. Top with cottage cheese mixture. Layer with remaining mostaccioli, meat sauce and mozzarella cheese. Sprinkle with Parmesan cheese.
  • Bake, uncovered, at 350 for 30-40 minutes or until bublby and heated through.

This dish was a little too cheesy for my taste, but my husband loved it. He said it was the best baked mostaccioli he's ever had. I'll probably make it again, but I'll use less cheese next time.

I'm not a huge fan of ricotta cheese, but I loved it in this dish. It added a creamy richness that balanced out the acidity of the tomato sauce. The pasta was cooked perfectly and the breadcrumb topping was the perfect finishing touch.

This is my new favorite pasta dish! It's so easy to make and it's always a crowd-pleaser. The pasta is always cooked perfectly and the sauce is always flavorful. I love that I can customize it with different toppings, too.

This dish was a little too rich for my taste, but my family loved it. They said it was the best baked mostaccioli they've ever had. I think I would have liked it more if I had used a lighter cheese, like cottage cheese or ricotta cheese.

I've made this dish several times and it's always a hit. It's so easy to make and it's always delicious. I love that I can customize it with different toppings, too. My favorite is to add a layer of sautéed mushrooms and onions.

I thought this dish was just okay. The pasta was a little overcooked and the sauce was a little bland. I think I would have liked it more if I had used a different type of pasta and a more flavorful sauce.

I'm not usually a fan of baked pasta dishes, but this one was surprisingly delicious. The ricotta and mozzarella cheeses added a creamy richness, and the tomato sauce was flavorful without being too acidic. I'll definitely be making this again.
