My daughter makes the best empanadas, ( her husbands co-workers always beg him to get her to make them some, lol,) but she fries them and uses beef. They ARE very good but a little too unhealthy for me so I made some tweaks and got these, which are very good also...WEPA!

Steps:
- 1. Spray a large skillet w/ cooking spray, place over medium-high heat. Add ground turkey, onion & green bell pepper. Cook, stirring until turkey is cooked.
- 2. Add the can of undrained tomatoes, chili powder, the packet of Sazon and the Adobo. Reduce heat to medium and simmer for about 20 mins, or until sauce is thickened.
- 3. Heat oven to 400. Place 1 pie crust on a lightly floured surface. Spoon about 1/2 of the turkey mix onto a half of the crust, sprinkle w/ 1.2 the shredded cheese. Fold the other 1/2 of the pie crust over turkey & cheese mix. Seal edges w/ a fork Place on a lightly sprayed cookie sheet. Repeat w/ other pie shell. Lightly spray the tops of Empanadas w/ olive oil cooking spray and bake about 20 mins or until golden brown. I serve these w/ a side of mild salsa or taco sauce and sour cream,
