Hawaiian Beef Casserole image

My mom, now deceased, was known for her awesome cooking. This is one of her recipes that I make on occasion. It is very easy to prepare and goes good served over steamed rice. The ground beef can also be substituted with ground chicken.

Number Of Ingredients 9

1 lb lean ground beef or 1 lb ground chicken
1/2 cup brown sugar
2 teaspoons cornstarch
2 teaspoons dry mustard
1 medium onion (sliced)
1 -2 cup fresh mushrooms (I sometimes use canned)
1 cup ketchup
1 (14 ounce) can kidney beans (drain & rinse)
1 (14 ounce) can pineapple chunks

Steps:

  • Cook meat with onions& mushrooms.
  • Drain in collander.
  • Combine remainder of ingredients and add to meat mixture.
  • Simmer about 25- 30 minutes.
  • Serve over rice.
