"This is a great way to use up leftover fresh vegetables. In addition to the potatoes, use whatever you have on hand to make this recipe bright. We like to serve it with a garnish of sour cream." -Jennifer Bistline, Confluence, PA

Overall, this is a good recipe for a simple and easy breakfast. It's not the most flavorful dish, but it's a good option for a quick meal.

I had some trouble getting the hash browns to crisp up. I think I may have cooked them at too low of a temperature.

This recipe was a little bland for my taste. I think it would have been better with some more seasoning.

I made this for dinner last night and it was a huge success! My husband and kids loved it. The hash browns were crispy on the outside and soft on the inside, and the eggs were cooked perfectly.
