Grits Casserole image

Great For Breakfast, Lunch, Or Dinner!

8 oz shredded velveta (comes in a bag)
16 oz sharp cheddar cheese shredded
1 1/4 c milk
2 c water
1 c quick cook grits
1 can(s) rotel
1 1/2 Tbsp butter
1 tsp salt
1 1/2 tsp garlic powder
1/2 c green onions diced & sautee'd

Steps:

  • 1. Preheat Oven To 350. In a saucepan, bring the water and milk to a boil. Add the salt and slowly add the grits and return to a boil, stirring constantly for 1 minute. Reduce the heat, cover, and cook for 3 minutes. While stirring the grits add the butter and stir until butter is melted. Cover and cook for 3 to 5 minutes, or until the grits are thick and creamy. Remove from heat and set aside.
  • 2. Using a skillet, saute the onions in the remaining tablespoon of butter for 1 minute. Add the garlic Powder, 1/2 of the cheddar, all of the Velvetta and onions to grits, and stir until the cheese is melted. Add the tomatoes and mix well. Pour the grits into a greased 8x11x2-inch casserole and bake for 30 minutes. Sprinkle remaining cheese over the casserole for the last 5 minutes of cooking time.
  • 3. For a "One Dish Casserole" I add Ground Sausage or Chopped Chicken Breast.

This recipe is a great way to use up leftover grits. I always have some leftover grits after making shrimp and grits, and this casserole is a perfect way to use them up.
