Grilled Orange Roughy Recipe - (3.8/5) image

3 tablespoons olive oil
2 cloves MINCED garlic
1 * MED MINCED FINE onion
1/4 teaspoon salt
1/4 teaspoon FRESH CRACKED pepper
4 tablespoons CHOPPED FRESH basil
3 cups FRESH CHOPPED tomatoes
1/2 JUICE lemon
3 * 6-8 0Z FILLETS orange roughy

Steps:

  • SAUTE OIL OVER HIGH HEAT. ADD ONIONS AND GARLIC. SAUTE UNTIL SOFT. ADD REMAINING INGREDIENTS. SAUTE 5 MINUTES, REMOVE FROM HEAT AND COOL. STORE IN CONTAINER AND REFRIGERATE. GRILLING: BRUSH FISH WITH OIL AND LEMON. SPRINKLE SALT PEPPER, DRIED BASIL AND OREGANO OVER FISH. PLACE FISH ON LIGHTLY OILED GRILL. GRILL OVER COALS 4 - 5 MINUTES PER SIDE UNTIL DONE. REMOVE FISH. GARNISH WITH TOMATO BASIL SAUCE.
