- SAUTE OIL OVER HIGH HEAT. ADD ONIONS AND GARLIC. SAUTE UNTIL SOFT. ADD REMAINING INGREDIENTS. SAUTE 5 MINUTES, REMOVE FROM HEAT AND COOL. STORE IN CONTAINER AND REFRIGERATE. GRILLING: BRUSH FISH WITH OIL AND LEMON. SPRINKLE SALT PEPPER, DRIED BASIL AND OREGANO OVER FISH. PLACE FISH ON LIGHTLY OILED GRILL. GRILL OVER COALS 4 - 5 MINUTES PER SIDE UNTIL DONE. REMOVE FISH. GARNISH WITH TOMATO BASIL SAUCE.
