Pistachio Cream Sauce - Whisk yogurt, buttermilk and maple syrup. Place in the refrigerator overnight. Remove pears from poaching liquid. Spoon yogurt into pear. Garnish with pistachios and orange peel. Drink Pairing: Bourbon, Kentucky
