Green Pea Salad With Lots of Crunch image

This is such a versatile salad -- you can add any ingredient you prefer to the peas - the sky is the limit.

1 pkg 10-oz. pkg. baby peas, thawed
1 c celery, diced
1 c cauliflower, diced
1/4 c green onion, diced
1 c roasted cashews, chopped
1/2 c sour cream
1 c ranch salad dressing

Steps:

  • 1. Chop all ingredients celery through cashews and place them in a bowl with the thawed peas.
  • 2. Combine the sour cream and ranch dressing well and then gently toss the salad. Serve cold or bring to room temperature just before serving.
  • 3. Optional items to add: bacon bits, hard-boiled eggs and feel free to substitute any other nut for the cashews.
