Green Beans with a Twist! image

I found this yummy green bean recipe on a Maltese cooking site. It's really simple to make and makes for a delicious side dish for any meal. *Note - Before starting the beans, gently toast your pine nuts in a small, dry skillet for approx. 5 minutes over medium heat - or until lightly browned. Enjoy!

1 lb fresh green beans
1 1/4 tsp olive oil
1-2 oz prosciutto (you can use more or less to your liking)
1 clove garlic, minced
1 tsp freshly chopped sage
coarse salt and freshly ground black pepper, to taste
1/4 c pine nuts, roasted
3/4 tsp lemon zest, grated
1/2 tsp lemon juice

Steps:

  • 1. Boil the green beans in a medium pot of salted water for about 3-4 minutes, or until just tender. Drain.
  • 2. Heat a medium-sized skillet over medium heat and add 1/4 t. of the olive oil. Once it's hot, add the prosciutto and cook until crispy - approx. 2-4 minutes. Set aside to drain on paper towels.
  • 3. Quickly wipe out the skillet, return it to medium heat, and add 1 t. of olive oil to heat. Now you can add the green beans, garlic, sage, salt and pepper to taste. Cook until the beans begin to brown up a bit.
  • 4. Add your roasted pine nuts, prosciutto, and lemon zest and stir together. As you serve, you can squeeze a bit of fresh lemon juice over it. Enjoy!
