GREEK ZUCCHINI PATTIES image

Yield 40 Patties

Number Of Ingredients 10

4 cups grated zucchini
1/2 cup grated onion
1 cup grated Romano cheese
1 tablespoon chopped parsley
1 teaspoon fresh mint chopped
3 eggs
1 teaspoon baking powder
1 cup flour
Salt and pepper to taste
Olive oil for frying

Steps:

  • Grate zucchini into a colander and allow to drain for several hours (the longer the better) squeeze out excess moisture if necessary. Transfer zucchini to separate bowl and combine with all other ingredients. Mix until all ingredients distributed evenly. Loose batter should form. Fry in good greek olive oil until brown and crispy. Salt while hot and serve warm.
