GREEK SALAD BITES image

Yield 30 appetizers

Number Of Ingredients 9

4 oz crumbled feta cheese
1/2 cup sour cream
1/4 cup snipped fresh parsley
2 T oil-packed dried tomatoes, drained and finely chopped
2 cloves garlic
1/2 t cracked black pepper
1 1/2 medium cucumbers
1/4 cup finely shredded fresh basil
1/4 cup chopped pitted kalamata olives

Steps:

  • In a small bowl stir together feta cheese, sour cream, parsley, tomatoes, garlic and pepper. Cover and chill for 2-24 hours. Using a sharp knife, trim the ends from the cucumbers; discard ends. Bias slice the cucumbers into 1/4 inche thick slices. Spoon 1 1/2 T cheese mixture onto each cucumber slice. Arrange cucumber slices on a serving platter. In a small bowl combine olives and basil. Spoon some of the mixture over each cucumber slice. Serve immediately.
