3 tablespoons olive oil
1 sweet onion, quartered and sliced into thin strips
8 cloves garlic, minced
10 cups chicken broth
2 skinless, boneless chicken breasts
1 lemon, zested
½ teaspoon red pepper flakes
1 cup Israeli (large pearl) couscous
1 teaspoon salt
ground black pepper to taste
½ (4 ounce) package crumbled feta cheese
⅓ cup chopped fresh chives

Steps:

  • Place olive oil in a large sauce pot over medium-low heat. Saute onion and garlic in the hot oil until softened, 3 to 4 minutes.

I'm a vegetarian, so I omitted the chicken from this recipe. The soup was still very flavorful and satisfying.

This soup is a great way to get your kids to eat their vegetables. My kids loved the bright yellow color and the tangy flavor.

I'm not sure what went wrong, but my soup turned out really watery. I think I might have added too much water.

This soup is a good starting point, but it needs some tweaking to make it really great.

I would make this soup again, but I would make some changes to the recipe. I would use less lemon and add more vegetables.

The soup was bland and lacked flavor. I had to add a lot of salt and pepper to make it palatable.

This soup was a little too sour for my taste. I think I would have preferred it with less lemon.

This soup is a great way to use up leftover chicken. I always have cooked chicken in my freezer, so it's nice to have a recipe that I can use it in.

I'm not a huge fan of chicken soup, but this recipe changed my mind. The lemon added a bright and refreshing flavor that made the soup anything but boring. I'll definitely be making this again.
