Grandma's Lazy Daisy Cake image

My Grandma was still baking this quick cake when she was 99 years old.

Number Of Ingredients 11

2 large eggs
1 c all purpose flour
1 c sugar
1 tsp baking powder
1/2 c milk
3 Tbsp butter
TOPPING
4 Tbsp butter
6 Tbsp brown suger....tbls should be heaping
1/2 c coconut
3 Tbsp evaporated milk

Steps:

  • 1. Beat eggs until thick & lemony. Add sugar, flour & baking powder. Bring milk and butter to boiling point and add to dry mixture. Pour in a SMALL oblong or 9" square pan. Bake at 350 for 20-30 minutes.
  • 2. While cake is baking, heat together all Topping ingredients. Pour over cake immediately when removed from oven. Put under oven broiler until topping is light to medium brown. Serve while still warm. :)
