Steps:
- Peel yams. Cut into 1 inch thick sliced rounds. If the slices are too large in diameter, cut in half. Place in a 6 quart pot, in two layers. Dot with butter, add pinch of salt, sprinkle with brown sugar evenly over the top, and pour water to the top of the first layer of yams. Cook on medium heat, rotating the top layer to the bottom half way through. Baste with the liquid throughout cooking time. Should take approximately 45 minutes to cook.
