My Mom owned a small restaurant, and her Hush Puppies were so good customers would order an extra serving! I tweaked the ingredients to make these without frying, to save on calories.

Steps:
- 1. Preheat oven to 400°F Spray a 12 count miniature muffin tin with cooking spray.
- 2. Using a whisk, blend egg, milk, and oil together in small bowl. Add cornbread mix, baking powder, and baking soda. Continue to whisk while adding onion and bell pepper. Pour or spoon into mini muffin tins sprayed with cooking spray.
- 3. Bake at 400° for 15 minutes. Flip muffins out onto cooling rack.
