Don 't let the mayonnaise in this recipe scare you off...these are some of the creamiest eggs I've ever made. The herbs give them a special freshness...from the July/August 2009 Simple and Delcious

8 eggs
1/4 cup shredded parmesan cheese
1/4 cup mayonnaise
1 tablespoon snipped chives
1 tablespoon minced fresh basil
1 tablespoon butter
1 tablespoon minced fresh parsley (optional)

Steps:

  • In a small bowl, whisk the eggs, Parmesan cheese, mayonnaise, chives and basil.
  • In a large skillet heat butter over medium heat.
  • Add egg mixture; cook and stir until completely set.
  • If desired, sprinkle with parsley and serve hot.
